MOMOTOSE 10 YEAR
Fukumitsuya has been working on long-term aged sake from early on. What is the best sake rice for giving sake the great power of time, and what kind of preparation should be done. It is "Momotose" that the romance that obtained the know-how of sake brewing, which anticipated the result of the last long process of storage and aging, and made the finished sake after 10, 20, and 30 years came to fruition. This Junmai sake has been aged for 10 years in ceramic tanks, giving it a very complex flavor. The amino acids and oxygen give this Koshu sake (aged sake) its rich amber color.
Tasting Notes: Pale golden color. Aroma of white or yellow flowers, hint of nuts and sweet spices. Pleasant smooth flavor and a mature richness. Goes very well with spicy and strong flavored dishes. Well-balanced clean and mellow flavor of its age. Clear golden color. The aroma is comprised of cocoa, coffee, vanilla, caramel, oak barrel, almond, and amaletto, with a smooth and rounded taste in the mouth, accompanied by a sharp bitterness and berry-like acidity, and an aftertaste of candied citrus peel. Well-balanced mellow and rich flavor.
