Award winning ceramic packaging is a tribute to the ornamental carp (KOI) that was developed in Niigata. Urban legend says that in the old days unscrupulous brewers would dilute sake so much that a gold fish could swim in it. “Not us”, says Imayo Tsukasa, whose flagship sake is the barrel select cask strength Junmai Daiginjo. Able to climb powerful waterfalls, carp are a symbol of strength and resilience.
Tasting Notes: Rich and layered. Tropical sweetness transitions into savory and toasty nuances like cashew, wheat toast, nougat, and shortbread. The finish is crisp and lively.
