IMAYO GOLD KOI JUNMAI DAIGINJO SHIZUKU Special Order

The Gold Koi is an extremely limited edition sake released in numbered batches, brewed specifically for the National Sake Competition. Each brewing step is meticulously choreographed, with stop watch in hand, the brewing team manages each work down to the second. Using Koshitanrei polished to 35%, brewed in small tanks, the sake is then pressed using the Shizuku method to gently extract the nectar. The porcelain bottle is sourced from Tajimi in Gifu, famous for its Takata Yaki style of pottery. The bottle is adorned with gold foil and presented in a cedar box hand carved by the toy maker to the Imperial family. Sake is then aged at 28F in the bottle prior to release to give depth and texture.


Tasting Notes: Fresh, clean, and well-balanced with a slightly sweet nose of pear, apple, and citrus, transitioning to a crisp, dry finish with cocoa notes.
