A cedar tank fermented Junmai sake! Cedar tanks are an integral part of fermented food and beverage in the Japanese culture from miso, sake, soy sauce, mirin etc. Many of these tanks are well over 100 years old but with the adoption of stainless steel tanks, there are hardly any coopers to carry on the trade. Imayo Tsukasa crowd-funded 2 cedar tanks in an effort to educate the public about this valuable craft and to show case a sake made from this traditional vessel. Its brewing team also participated in the coopering of the tanks to learn the art of cedar tank building. The resulting sake is an elegant Junmai kissed by cedar – reminiscent of a barrel fermented and aged Burgundian white wine.
Tasting Notes: Rich full-bodied sake with gentle aromas of cedar. The well integrated cedar gives layers of complexity to this well-structured sake with clean crisp acidity.
