Tamanohikari Brewery
Founded in 1673. After a fire from an air-raid in 1945, Tamanohikari moved to Fushimi in Kyoto. In 1964 it became one of the first breweries to make only Junmai sake. They are dedicated to sustainability, and were instrumental in bringing back Omachi rice in 1982, considered an important heirloom varietal used to make sake, and starting in 2014 they encouraged many of their farmers to switch to natural and sustainable farming, without pesticides. They also polish all of their rice in house, a rarity, and use a flat rather than round polisher.
