Blended with various lots, (Junmai, Honjozo, Koshu, triple Koji brewed sake) that were made with two types of rice with different polish ratio. Recently, Richard Geoffroy – former Chef de Cave of Dom Perignon – has introduced IWA 5, also an Assemblage priced at approx. $130/bottle
